Ingredients
2 tablespoons Homemade Ghee, ghee, or extra-virgin olive oil
¼ cup pine nuts
1 cup sliced onion
3 cloves garlic, minced
1 pound 85 percent lean ground beef
¼ teaspoon ground cardamom
1½ teaspoons ground allspice
1 teaspoon ground cinnamon
¼ ground nutmeg
1 teaspoon kosher salt
1 teaspoon black pepper
4 cups shredded cabbage or cauliflower rice
¼ cup chopped fresh cilantro, parsley, or mint (or a mix)
Directions
HEAT A LARGE skillet over medium heat; add the ghee. Once the ghee has melted, add the pine nuts and cook, stirring for 1 to 2 minutes.
Add the onion and garlic. Cook and stir for 1 to 2 minutes. Add the ground beef and cook, breaking the meat up with a wooden spoon, for 1 to 2 minutes. Add the cardamom, allspice, cinnamon, nutmeg, salt, and pepper. Continue cooking and stirring until the beef is cooked through, 4 to 5 minutes.
Remove from the heat and stir in the shredded cabbage. Garnish with the herbs and serve.
