Ingredients

1 tablespoon coconut oil
2 tablespoons green curry paste
1 cup chopped eggplant
½ cup cherry tomatoes
1 tablespoon minced fresh ginger
3 cloves garlic, minced
1 (14-ounce) can coconut milk
2 teaspoons soy sauce
2 teaspoons fish sauce
1 teaspoon Swerve
½ cup chopped fresh basil
1 pound mussels, scrubbed, debearded if necessary

Directions

HEAT A LARGE skillet over medium-high heat. Add the coconut oil and green curry paste. Cook and stir for 1 minute.

Add the eggplant, tomatoes, ginger, and garlic. Cook and stir for 1 minute.

Add the coconut milk, soy sauce, fish sauce, sweetener, and ¼ cup of the chopped basil. Cover and cook until the eggplant is cooked through, about 10 minutes.

Add the mussels. Cover and cook until the mussels have opened, 3 to 5 minutes. Discard any mussels that have not opened.

Stir in the remaining ¼ cup basil.
