My favorite way to make hard-cooked eggs is in an air fryer. Use 250°F for 18 minutes, followed by an ice bath (for the eggs, not for you), and you end up with perfectly cooked eggs—and no pots to wash!

QUICK EGG SALAD
Eggs/Other Proteins: 2 hard-cooked eggs (peeled and chopped)
Fat: 2 Tbsp mayonnaise
Seasonings/Condiments: ½ tsp whole-grain mustard, ¼ fresh lemon juice, pinch each salt and pepper
Vegetables/Herbs: 2 Tbsp finely minced celery, 1 green onion (sliced), 1 lettuce leaf
Stir together everything except the lettuce leaf. Scoop into lettuce.
BUFFALO DEVILED EGGS
Eggs/Other Proteins: 2 hard-cooked eggs (peeled and halved)
Fat: 1 Tbsp mayonnaise, 1 Tbsp crumbled blue cheese
Seasonings/Condiments: ½ tsp fresh lemon juice, ½ tsp yellow mustard, pinch each salt and pepper
Vegetables/Herbs: 1 Tbsp finely diced celery
Mash the egg yolks with the remaining ingredients. Spoon evenly into egg whites.
GUACAMOLE DEVILED EGGS
Eggs/Other Proteins: 2 hard-cooked eggs (peeled and halved)
Fat: 1 Tbsp mayonnaise, 1 Tbsp guacamole
Seasonings/Condiments: ½ tsp fresh lemon juice, pinch each salt and pepper
Mash the egg yolks with the mayonnaise, guacamole, lemon juice, and salt and pepper. Spoon evenly into egg whites.
EGG AND AVOCADO BOWL
Eggs/Other Proteins: 2 hard-cooked eggs (peeled and chopped)
Fat: ½ ripe avocado (coarsely chopped)
Seasonings/Condiments: 1 Tbsp vinaigrette, pinch each salt and pepper
Vegetables/Herbs: 2 cherry tomatoes (quartered), 1 green onion (trimmed and sliced), 1 heaping Tbsp finely chopped red bell pepper
Toss everything together.

Eggs/Other Proteins: 1 hard-cooked egg (peeled and sliced)
Fat: 2 Tbsp guacamole
Seasonings/Condiments: Pinch each salt and pepper
Vegetables/Herbs: 2 butter lettuce leaves
Spread the guacamole on the lettuce leaves. Top with egg slices. Sprinkle with salt and pepper.
EGG AND RADISH WRAPS
Eggs/Other Proteins: 1 hard-cooked egg (peeled and sliced)
Fat: 1 Tbsp mayonnaise
Seasonings/Condiments: Pinch of coarse salt
Vegetables/Herbs: 2 butter lettuce leaves, 2 radishes (trimmed and sliced)
Spread lettuce leaves with mayonnaise. Top with egg and radish slices. Sprinkle with salt.
HARD-COOKED EGG WITH MUSTARD AND HERBS
Eggs/Other Proteins: 2 hard-cooked eggs (peeled and halved)
Seasonings/Condiments: Whole-grain mustard, pinch each salt and pepper
Vegetables/Herbs: Chopped fresh herbs, such as parsley, chives, or basil
Spread egg halves with mustard. Sprinkle with salt and pepper. Top with fresh herbs.
BUTTERED HARD-COOKED EGGS
Eggs/Other Proteins: 2 hard-cooked eggs (peeled and diced)
Fat: 1 Tbsp melted butter
Seasonings/Condiments: Pinch each salt and pepper
Drizzle eggs with melted butter. Sprinkle with salt and pepper.
GREEN SALAD WITH CRUMBLED EGGS AND BACON
Eggs/Other Proteins: 2 hard-cooked eggs (peeled and grated on a box grater), 1 piece cooked and crumbled bacon
Fat:
Seasonings/Condiments: Vinaigrette, pinch each salt and pepper
Vegetables/Herbs: Salad greens or baby spinach
Lightly dress the greens with vinaigrette. Top with crumbled egg and bacon. Sprinkle with salt and pepper.
SALMON SALAD BOATS WITH CURRIED EGGS
Eggs/Other Proteins:1 (2.5-ounce) package salmon, 1 hard-cooked egg (peeled and sliced)
Fat: 1 Tbsp mayonnaise
Seasonings/Condiments: Curry powder, pinch of salt
Vegetables/Herbs: 2 quarters of a red, yellow, or orange bell pepper
Stir together the salmon, mayonnaise, and a pinch each of salt and pepper. Scoop onto the pepper quarters. Top with sliced egg. Sprinkle with salt and curry powder.
