Ingredients

FOR THE SAUCE
½ cup low-sodium chicken broth or vegetable broth
1 tablespoon soy sauce
1 tablespoon toasted sesame oil
½ teaspoon sambal oelek or other hot sauce
½ teaspoon kosher salt
2 teaspoons Swerve
¼ teaspoon xanthan gum
FOR THE VEGETABLES
1 tablespoon extra-virgin olive oil
1 tablespoon minced fresh ginger
3 cloves garlic, minced
1 pound asparagus, trimmed and bias-sliced into 2-inch pieces
3 cups cremini mushrooms, trimmed and quartered
2 tablespoons sesame seeds (optional)

Directions

FOR THE SAUCE: In a small bowl, whisk together the chicken broth, soy sauce, sesame oil, sambal oelek, salt, sweetener, and xanthan gum. Set aside.

FOR THE VEGETABLES: Heat a large skillet over medium-high heat; add the oil. Once the oil is

hot, add the ginger and garlic and stir. Add the asparagus and stir. Cover and cook for 1 minute.

If necessary, add ¼ cup of water to deglaze the skillet. Add the mushrooms and stir to coat.

Pour in the sauce and stir to coat. Cover and cook for 2 minutes.

Sprinkle with sesame seeds, if desired.
