Ingredients:
1 pound chicken tenders, cut into bite-size pieces
1 (12-ounce) package frozen chopped spinach
1 (8-ounce) jar marinated artichokes, undrained
3 cups low-sodium chicken broth
½ cup chopped onion
3 cloves garlic, minced
1 teaspoon Italian seasoning
½ teaspoon red pepper flakes
1 teaspoon kosher salt
½ teaspoon black pepper
1 tablespoon fresh lemon juice
½ cup shredded Parmesan cheese
Directions
IN A LARGE SAUCEPAN, combine the chicken, spinach, artichokes, broth, onion, garlic, Italian seasoning, red pepper flakes, salt, and pepper. Bring to a boil over high heat. Reduce heat and simmer for 20 minutes. Stir in the lemon juice and Parmesan cheese.
