Ingredients:

Cooking spray
¾ cup Swerve
¼ cup butter, softened
2 large eggs
2 cups almond flour
1 teaspoon almond extract

Directions:
PREHEAT the oven to 350°F. Spray a large sheet pan with cooking spray; set aside.

In the bowl of a stand mixer fitted with the paddle attachment, combine the sweetener and butter and beat until smooth. Add the eggs and beat until combined. Add the flour and almond extract. Mix until the ingredients are well combined.

Drop by heaping tablespoons onto the prepared sheet pan in 20 portions. Flatten each slightly. Bake until the bottoms are browned and the edges are crispy, 15 to 18 minutes.

Cool on the pan on a wire rack for 5 minutes, then remove from the pan and cool completely on the rack. Store in an airtight container.

VARIATIONS TO TRY

Omit the almond extract and add ½ teaspoon ground cinnamon.

Substitute lemon extract for the almond extract and add 1 teaspoon lemon zest.

Substitute the almond extract for the seeds from a vanilla bean.
